CUPPING NOTES: Medium Acidity and Body, Apple, Honey, Cherry.
Jose Francisco and Emma are in the process of expanding their farm and increasing their area of coffee cultivation, which only became possible after Gold Mountain Coffee Growers helped them escape from a predatory debt cycle. Jose Francisco works hard in the fields and Emma is the financial brain behind their finances and small payroll to workers. Their "cherry microlot" beans have a slower maturity rate because of their high altitude and cool climate, allowing beans to absorb more nutrients. The result is more complex cupping notes (including a prominent cherry note) and denser, sweeter beans. The newly-acquired portion of their farm is interspersed with cilantro, carrots, and other vegetables to supplement their income.
