Full Cupping Notes: What an unusual Brazilian coffee this turned out to be. When we tasted it we noted strong herbal notes that verged on floral. I want to be clear, this is not Gesha! The cup flavors are rustic, nutty, bittersweet, and even leathery. But within those core flavors are very interesting aromatic accents at the lighter end of the roast spectrum. The dry grounds had some of the nuttiness indicative of origin, accented by herbal notes, leathery hints, and rustic sugars. The wet aroma had notes of fresh and dried herbs mixed in with bittersweet smells in the steam. The cup showed rustic bittersweetness, cocoa and molasses, with notes of nut chew candies, and some woody hints. As the coffee cooled, we picked up on light accents of fresh and dried herbs, such as sage, fennel, and tarragon. We found this to be pretty low acidity, and big bodied. Full City roasts will satisfy those who love the low-toned, bittersweet aspects of Brazil, and is also a great starting point for espresso.
